Bolognese Pasta Sauce

Easy and healthy Sicilian pasta sauce recipe from our Tons of Tomatoes Cooking Class!

3 tablespoons Sicilian Extra Virgin Olive Oil
1 white onion small dice
8 cloves of garlic minced
1 bulb of shallot onion
½ lb. of ground beef
½ lb. of ground veal
¼ lb. of ground sausage (hot Italian)
14 ounces ground tomato -Passatta
14 ounces of whole tomato
1 cup of re hydrated sun dried tomatoes (dried tomatoes soak in water)
1 tablespoon dried basil
1 tablespoon dried oregano
Sicilian Sea Salt and pepper to taste
In a large pot over medium-high heat combine the oil, onions, shallots and garlic. Cook onions until translucent (approx 5 minutes)
Add all of the meat, once the meat is fully cooked, add all of the tomato product including the sun dried tomatoes. Bring to a hard simmer then turn heat to low and let simmer for 1 ½ to 2 hours. Add dried herbs and simmer for another 10-15 minutes. Season to taste and serve.
