Sicilian Artichoke Salad Insalata di Carciofi Serves 6

4 large artichokes
1 stalk of celery
juice of 2 lemons
50 gr. of parmesan cheese to flakes or gruviera cheese cut to slices Sicilian Olive Oil
salt and pepper

Directions:

Mix water and lemon juice in a container.
Remove the stalk, hardest leaves and the base of the artichokes. Cut the top of the artichokes, divide in two vertical parts and using a knife to remove the thorns.

Dip in the container with lemon juice and water for 10 minutes.
Drain and cut the artichoke - julienne (into strips).

Cut the celery very thin. Place the artichoke and the celery, in a salad-bowl and add Sicilian Olive Oil, the juice of a lemon, salt and pepper.  Before serving add the parmesan cheese to flakes. Toss lightly and serve.
