Sun-Dried Tomato Hummus, alla Accursio

6 to 8 Tablespoons Sun-Dried Tomato Paté
6 to 8 cloves garlic
15 ounce can Chickpeas, drained and rinsed
1/2 to 1 cup Sicilian Extra Virgin Olive Oil
Large pinch each Rosemary and Ground Hot Peppers
Sea Salt and Pepper to taste
1/4 cup water

Combine chickpeas, paté, garlic and seasonings in a food processor. Process two minutes, and then slowly add 1/2 cup olive oil through the feed tube while the machine is running. Stop machine and scrape down. With the machine running, add water. Scrape down again and check consistency; add more olive oil if needed to achieve a smooth dip. The amount of olive oil needed will depend on the chickpeas, so expect a little variation each time you make this. (And it will be more than once!) Perfect with pita chips, crackers and crudités.
