| Sicilian Fish Sauce for Pasta | ||||
| 4 scallions, finely chopped 8 whole fresh basil leaves 1 tablespoon minced garlic 1 tablespoon Sicilian Extra Virgin Olive Oil 1 cup peeled & chopped fresh Roma tomatoes 2 teaspoons Hot Mediterraneo Paté or to taste, optional 3 tilapia fillets, cubed; or any firm sweet non-oily fish 1/2 pound prepared Poiatti Spaghetti Sauté chopped scallion and garlic in olive oil until translucent. Add tomatoes, basil and salt, pepper & Pate to taste and let cook for about 5minutes until tomatoes cook down into a sauce. Add fish cubes and simmer on low until fish is tender. Place cooked pasta with fish sauce in a large serving bowl and serve with the cheese, crusty bread and a salad. |
