Balsamic Toasts

8 slices baguette, about 3/4 inch thick
2 Tablespoons butter, softened
1/2 cup grated Parmesan cheese (NOT SHREDDED!)
1 cup balsamic vinegar
2 Tablespoons sugar

Preheat oven to 450 or heat broiler. While it heats, bring the vinegar and sugar to a boil in a small saucepan. Reduce heat and simmer about 10 minutes, or until reduced by 1/3. Spread each slice of bread with butter and press that side down into a plate of grated cheese. Toast until golden. Serve with a small amount of vinegar for dipping. Australian shiraz or French syrah wines are fantastic with this!
