| Spaghetti Aglio e Olio (Garlic and Olive Oil Pasta) | ||||
This is the perfect quick dinner! Add some leftover chicken or other meat or cooked veggies for a more complete meal. This is delicious with broccoli stir fried into the olive oil! 3/4 cup Sicilian Extra Virgin Olive Oil 5 cloves garlic 1 pound spaghetti or linguine Sea salt, fresh flat-leaf parsley, Ground Hot peppers Heat the oil in a skillet and add the garlic in thin slices or whole and smashed with a knife (less pungent). Sauté until it just begins to turn golden, remove from the heat and add fresh chopped parsley, salt and red pepper. At the same time, have your pasta cooked al dente and ready so that the sauce can be mixed in immediately. Use a little cooking water from the pasta to help the sauce coat the pasta evenly. Garnish with grated Parmigiano-Reggiano cheese. Enjoy! |
