Sicilian Fruit Bars
Great Italian recipe for family gatherings, pot lucks, and bake sales. 

For Crust:
1 1/3 cups all-purpose flour
1/4 cup sugar
1/2 cup softened butter or margarine
1 teaspoon citrus zest, optional (try Red Orange, Tangerine
or Lemon)

Preheat the oven to 350. Combine flour, butter and sugar in a mixing bowl. Mix until crumbly; press into bottom of an 8 inch pan. Bake for 15 to 20 minutes or until edges are golden brown.

For Filling:
1/2 cup jar
Fattoria Sicilsole Jam
1/4 cup sugar
2 eggs
2 tablespoons flour
1/4 teaspoon baking powder

Pour over hot prepared crust and bake for an additional 15 to 20 minutes or until filling is set. Sprinkle with powdered sugar while warm and again once cool. Great with vanilla ice cream or frozen yogurt!
